We start by washing the prawns thoroughly under cold, running water. Each prawn is carefully peeled and deveined to remove the digestive tract — this step is essential not only for hygiene but also for taste and texture.

We sometimes use a splash of lemon juice or vinegar during the rinse to naturally cleanse and reduce any fishy odour, while maintaining the prawn’s natural sweetness.

After washing, the prawns are gently patted dry with a clean kitchen towel. This step helps the marinade stick better and ensures they don’t become soggy during cooking or frying.
